Maybe my body/mind is going in to panic mode about the upcoming Whole30 Diet challenge, but I really wanted some junk food. I really wanted cookies to be exact. I didn’t have chocolate chips so I figured oatmeal cookies would be second best, but I didn’t have enough oats; I did, however, find a box of blueberry oatmeal and figured that would probably work. You can make cookies with any oatmeal packet. To alter the original oatmeal cookie recipe I just subbed oatmeal packet for the white sugar and oats called for in the recipe.

Oatmeal Packet Cookies
Makes 12-20 cookies (obviously varies by size and the amount of dough you eat before hand)
Ingredients:
1 stick softened butter
1/2 cup packed brown sugar
1 egg
1 tsp vanilla
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
3 packets oatmeal
2 tbsp oats (optional)
Directions:
Preheat oven to 350 degrees
Mix butter, sugar, eggs and vanilla
Mix in baking soda, cinnamon, and then flour
Mix in packets of oatmeal and oats
Spoon onto cookie sheet and cook 8-12 minutes or until they begin to brown and are firm to touch

Sounds awesome and I love the fact you factor in eating dough before cooking them. You are a realist… no one goes through the cooking process without eating at least one cookies worth of mixture!
I can’t understand those people that don’t eat cookie dough! I just can’t resist! Lol.
