Grain-Free Crumbly Cinnamon Muffins

I love muffins and I love cinnamon, so of course I am going to love cinnamon muffins! I’ve been craving some muffins and I finally found the muffin recipe I made some months back and I altered the recipe a little bit with what I had in the house already. The base of this recipe comes from Comfy Belly’s Cinnamon Bun Muffins; I just used some slightly different ingredients and measurements. These muffins are dense and moist and really hit the spot!

Crumbly Cinnamon Muffins

Moist and Crumbly Muffins (they taste good with some butter too!)

Makes approx. 10 muffins
Preheat oven to 325 degrees

Ingredients:

  • 1/2 cup Greek yogurt  (I only had fat free lemon yogurt, and it was still delicious!)
  • 2 tbsp 100% pure maple syrup
  • 2 tbsp water
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • pinch of salt
  • 1/2 tsp baking soda

For the filling:

  • 2 tbsp cinnamon
  • 3 tbsp maple syrup
  • 2 tbsp butter, melted

Directions:

  • Combine wet muffin ingredients, then add in dry ingredients. Batter will be very thick – like cookie dough
  • Combine filling ingredients in separate small bowl
  • Press a tbsp size ball of dough into bottom of 10 muffin cups (I use liners)
  • Spoon about 1 tsp of filling onto each muffin
  • Divide remaining dough among the 10 muffins, pressing dough gently into cups
  • Spoon remainder of filling over the top of the 10 muffins
  • Bake at 325 degrees for 16-18 minutes

    • I haven’t tried it. Coconut flour really soaks up a lot of moisture, so if you do try, you may need to add more liquid, or maybe add an egg for increased stability as well. If you try, let me know how they taste!
