A Tasty Way to Eat Your Veggies

We finally made vegetable curry tonight for dinner and it was delicious (and quick and easy)! It was just what my body needed after eating so much junk food these last couple of days. I found the recipe from Kidspot Australia and altered it a bit to my liking. I will definitely be making the vegetable curry again, but maybe as a side dish next time since this did not have much protein in it.

Vegetable Curry
Serves 4-6 as a main dish, more if using for a side

  • 1 head of cauliflower (about 3 cups)
  • 2 medium potatoes, cut in large cubes (I used regular baking potatoes and kept the skin on)
  • 1.5-2 cups frozen peas
  • 1 onion, diced (I used a yellow onion and diced it into thick pieces)
  • 1/2 cup pumpkin puree
  • 3 tbsp – 1/4 cup curry powder
  • 3 tbsp butter
  • 1/4 cup water
  • Olive oil
  • Plain Greek yogurt (optional)

  • In two separate pots, cook potatoes and cauliflower in salted boiling water until desired doneness (maybe a little less so with the cauliflower)
  • Throw the peas in one of the pots to cook/defrost before you drain
  • After potatoes and cauliflower has cooked, saute onion in olive oil in large pan or pot (if using a pan, it needs to be BIG)
  • When onion has almost finished cooking, stir in curry and butter
  • Add cooked vegetables, pumpkin puree, and water and stir to coat evenly with curry and warm all the way through

  • Serve with or without yogurt
  • Enjoy!
