Panic baking: Oatmeal Packet Cookies

Maybe my body/mind is going in to panic mode about the upcoming Whole30 Diet challenge, but I really wanted some junk food. I really wanted cookies to be exact. I didn’t have chocolate chips so I figured oatmeal cookies would be second best, but I didn’t have enough oats; I did, however, find a box of blueberry oatmeal and figured that would probably work. You can make cookies with any oatmeal packet. To alter the original oatmeal cookie recipe I just subbed oatmeal packet for the white sugar and oats called for in the recipe.

Berry Good Goat Cheese Tarts

Gluten-free goat cheese tarts with blueberry compote

I bought goat cheese at the store the other today in hopes of recreating a magical coconut goat cheese tart I had a couple weeks ago. I haven’t bought the coconut yet, but I still wanted to bake something. I also didn’t want to spend a long time over a hot oven in the middle of summer. I opted for mini tarts and no-bake cheese cake filling with goat cheese. And because I still have a ton of blueberries left, I also whipped up a quick batch of blueberry compote.

The little tarts taste even better after being in the fridge and completely chilled, but eating them warm won’t do any harm either.

Quick Gluten-Free Cheesecake Tarts with Goat Cheese and Blueberries
Makes 10 mini-tarts
Preheat oven to 350 degrees
Grease muffin tins – I like to then put a little strip of tinfoil in the cups (where the ends reach above the cup) and grease that as well, so that when the tarts are cooked, the strips can be pulled up to release the cups easily.

Tart Crusts:
3/4 cups almond meal
1/2 cups coconut flour
4 TBSP butter, cut into chunks
1 tsp vanilla
2 tsp maple syrup
3-5 tsp of water

Mix almond meal and coconut flour together in a bowl. Using a pastry cutter, a fork, your hands, or whatever works for you, cut cold butter into flour mixture until crumbly.  Mix in vanilla and maple syrup. Add water, one tsp at a time until mixture becomes a dough consistency and can be formed into a ball. Press dough into greased muffin tin. Poke bottom of each dough cup with a fork a couple of times to prevent dough from rising. Bake 8-10 minutes or until they start to brown and are firm to touch.  Let stand for a couple of minutes and carefully remove crusts and let them finish cooling on a wire rack.

Blueberry Compote
3/4 cup blueberries
2 tbsp lemon juice
2 tsp honey
1/2 tsp arrowroot

In a small sauce pan, combine all ingredients. Cook on med heat, stirring occasionally. Smash berries and cook for approximately 8 minutes or so, while you prepare the cheesecake filling and finish baking the tart crusts. Place in bowl and let cool in the refrigerator.

Cheesecake Filling:
8 oz goat cheese (I used goat cheese w/honey)
3 tbsp cream
1 tsp vanilla
2 tbsp coconut butter
2 tsp maple syrup
2 tsp honey
1/2 tsp arrowroot

Using a stand mixer, mix all ingredients  for 3 minutes or until perfectly smooth and creamy.

Assembly:

After the tarts have cooled, gently spoon cheesecake mixture into crusts. Place mini-tarts in the fridge and allow to set for at least an hour, or until firm. Serve with a spoonful of blueberry compote on top.

Variations:

Add lemon juice or other flavor to cheese mixture
Make different fruit compotes – strawberry, blackberry, or a mixed berry, apricot, cherry, the options are endless
Use cheesecake filling for cupcake fillings or even as frosting – just add additional liquid for desired consistency
Mix fruit and cheese mixtures and use for pancake topping

 

Gluten-Free White Peach and Blueberry Cobbler

More Summer Berry Goodness!

Fruit cobbler and ice cream belong with summer. There’s just something about summer fruit and ice cream that pair perfectly with hot summer days and BBQ’s. For the 4th of July I decided to make cobbler and ice cream from scratch, using no white sugar or flour.

I had an abundance of white peaches (my favorite) and blueberries that seemed destined for this tasty experiment. I also replaced the flour with my trusty combo of 3:1 parts almond meal and coconut flour. For the ice cream, I used a recipe out of Nourishing Traditions and it was a crowd hit!

Warm white peach and blueberry cobbler with homemade ice cream

Nourishing Traditions Vanilla Ice Cream:
3 egg yolks, beaten
1 tbsp Vanilla (I used 2 tsp vanilla and the scrapings from 1 vanilla bean)
½ cup pure maple syrup
1 tbsp Arrow Root (which I found in the organic section of Raleys)
3 cups Heavy Cream (the book calls for raw or not ultra pasteurized, but the only cream I found that wasn’t ultra-pasteurized was about $4 a cup and a little too expensive for me. I did, however, scoop the cream off the top of our milk to account for part of the 3 cups cream).

Mix ingredients into beaten eggs and follow your ice cream maker’s instructions.

For whatever reason (maybe because of the arrow root) the ice cream froze quickly to the sides of the ice cream maker so that the paddle could not turn, making the ice cream maker stop. I had to scoop all the ice cream out, freeze it for a couple hours then mix it with my mixer and put it back in the freezer. Next time I will try it with less rock salt.

Peach Berry Cobbler:
Bake in a 9×9 square Pyrex dish or something of similar size and depth.
Preheat oven to 375 degrees

For the filling:
5 White Peaches peeled, cored, and cut into pieces
½-1 cup blueberries
¼ cup pure maple syrup
1 tsp cinnamon
1 tsp arrow root (optional)
2 tbsp butter

Combine all ingredients and pour into dish. Cut butter into small pieces and scatter over top of the fruit mixture.

For the topping:
¾ cup almond flour
¼ cup coconut flour
4 tbsp butter
1 tsp vanilla
1 tsp maple syrup
½ tsp cinnamon
2 tbsp granola (Optional – I used gluten-free vanilla granola, oats would probably work as well.)

Mix flours together. Stir in vanilla, cinnamon, and maple syrup. Using a pastry cutter, fork, or other method, combine cold butter, pieces at a time, into the flour mixture until crumbly and evenly distributed. Stir in granola.  Sprinkle over fruit mixture.

Bake 15-20 minutes or until top of cobbler is golden brown.

Serve with homemade ice cream and enjoy!

Notes – you can really use any amount of fruit that fits in a 9×9 pirex. The other day I made a cobbler with all the fruit that was about to turn – pluots, peaches, and nectarines. A cobbler is very versatile and hard to mess up. If I wasn’t trying to stay away from sugar, brown sugar is quite tasty in the topping instead of maple syrup. I made a sinful cobbler for my family and it included a cube of butter, a half a cup of brown sugar, and about a half a cup of flour. Not healthy in the least, but very good!

Summer Berry Goodness Part 3 – My Favorite Muffins

Muffins: a very-much-loved breakfast food for kids and adults alike. Unfortunately they don’t give much love to your waistline (or maybe they give too much love). Store bought muffins or prepackaged mixes are filled with sugar and preservatives and other chemicals; even if some of them do taste pretty tasty.

I like to eat grain-free or only sprouted grains and I love almond and coconut flours (as you can see from the past). I have some friends who are on the Paleo diet and don’t eat wheat flour either. One of them posted a link to Banana Nut Muffin Loaf and I knew I had to try it.

I made a few changes and the results were stellar. These muffins do not taste like any diet or health variety. They are moist, sweet, and hard to resist. Even my brother absolutely loves them and he likes to commit himself to junk-food-only meals.

Banana Nut Blueberry Muffins

Soooo tasty!

Makes 12 muffins
Preheat oven to 375 degrees
Grease muffin tin with coconut oil or use muffin papers

Ingredients:
3/4 C Almond Meal
1/4 Cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
2 1/2 super ripe, large bananas – mashed
2 eggs
1 tsp vanilla
1 tsp honey (optional – really doesn’t need it)
3/4 cup walnut halves – then put in food processor or chop finely
1 cup blueberries

In one bowl, combine all dry ingredients. In another bowl, combine all wet ingredients and mix with hand mixer until well blended. Add blueberries and walnuts and mix again. Pour wet ingredients into dry ingredients and stir until combined.

Spoon into 12 muffin cups. Bake 8-12 minutes or until firm to touch toothpick comes out clean when inserted into muffin.
Serve with butter or as is!

Blackberry Season!

I went over to a friends house yesterday and helped garden and pick blackberries. Blackberries are very protective of themselves – they like to grow large thorns and try to persuade you not to pick them. But you have to tell yourself the the blood, sweat, and tears is all worth it. And usually it is.

Because I loved the blueberry compote so much, I decided to make some blueberry-blackberry compote and some lemony shortbread tart crust. My husband thought there was too much lemon – but I thought it was perfect.

The crust is made with almond and coconut flour and gluten-free like the muffins I made a couple of days ago, but the crust is crisp and tart and not sweet and soft.

I made half the crust recipe and just broke the crust into pieces and covered them in compote. Here is the recipe to make a full tart:

Blueberry Blackberry Lemon Tart

Makes about 8-10 servings

Blueberry-blackberry compote

2-2 ½ Cups of berries (any mixture of the two will do)
1/3 cup fresh lemon juice
2 tsp stevia
1 tsp honey
(or sweeten to taste)

Combine ingredients in saucepan and simmer over low-medium heat for 15-20 minutes, stirring occasionally and smashing berries to release juice. While berries are simmering, prepare the tart crust.

Lemon Tart Crust:

1 cup almond flour
1 cup coconut flour
1 stick of butter, softened at room temperature
1 tsp vanilla extract
½ cup fresh squeezed lemon juice
3-6 tbsp water

Preheat oven to 350 degrees and grease a tart pan

Combine flours, then add in chunks of butter and blend with a fork, to make crumbs.  Add vanilla and lemon, and continue to stir. Add 1 tbsp of water at a time until your dough reaches a consistency where you can roll it into a ball and it does not crumble. Press into a tart pan. Take a fork and poke holes around the crust before you put it in the oven, to prevent crust from rising. Bake 8-12 minutes or until it starts to brown and is firm to touch.

Let crust cool. Pour berry mixture over tart and serve warm or refrigerate and serve chilled.

*This dessert is quite tart. It would probably be best served with something sweeter – vanilla yogurt or ice cream. I prefer the muffin top cookie things with the compote than the lemon tart and compote combo.

Summer Berry Goodness Part 1

Over the next few weeks I am sure that I will be posting lots of blueberry recipes. We usually get about a container of blueberries every week from our CSA box and although I love blueberry things, I’m not a huge fan of just plain blueberries.

Yesterday I had an amazing urge to eat berry pie; blackberry, huckleberry, blueberry, or any combination of dark tangy berries. Flour and sugar filled desserts I am trying to stay away from, so I created something to satisfy my sweet tooth.

Easy Mini Almond Banana Muffin Tops with Blueberry Compote

I didn’t mean for them to turn out like muffins (I was aiming more for a crisp cookie), but these tasted yummy just the same.

Makes 4 small servings or two large desserts

Ingredients:
Blueberry Compote
1- 1 ½ Blueberries
2 TBSP lemon Juice
1 tsp Stevia Powder
1 tsp honey
(Or sweeten to taste)

Put all ingredients into small sauce pan and toss to coat. Set burner to medium low heat. Crush berries and stir occasionally. Cook for about 10-15 minutes until berries have popped and mixture is mostly liquid.

Almond Banana Muffin Tops:
1 egg
2 TBSP butter
1 tsp vanilla
1 tsp honey
½ Banana
¾ Cup Almond Flour
¼ Cup Coconut Flour
¼ tsp baking soda

Preheat oven to 350 degrees
In a bowl, mix together egg, butter, vanilla, honey, and banana. Add flours and baking soda and mix until blended smooth. Split between 4 greased muffin cups or spoon onto baking sheet. Bake 8-10 minutes or until they start to brown and are firm to touch

Spoon blueberry compote over muffins. Drizzle plain yogurt (I love the Strauss plain whole milk yogurt with no sugar added), or if you can’t resist; your favorite vanilla ice cream.

My husband might tell you that I licked my bowl clean. I will then tell you that there is no proof.

The next morning for breakfast I had a bowl of yogurt with some of the blueberry compote on top and a piece of muffin. So delicious.
